by Jacqui Little, MS, RD, CD When I really need a sweet treat but don't want to have the insulin crash that follows, I make these! They store great and pack a huge nutrition boost with fiber! |
Ingredients |
Two 8-oz mason jars ¼ cup chia seeds, divided 4-6 tsp. Swerve®, granular or a few drops of liquid stevia to taste, divided Pinch of warm spices, such as cinnamon, nutmeg, cardamom or cayenne 2 Tbsp. unsweetened cocoa powder, divided 1 cup unsweetened almond or coconut milk ½ tsp. vanilla extract, divided Pinch of sea salt A few sugar-free chocolate chips, roasted cacao nibs and/fresh raspberries |
Directions |
Divide the chia, sweetener, spices and cocoa powder between the mason jars. Mix well to break up any lumps. Use a fork to stir in milk, vanilla, and salt. Refrigerate overnight. Enjoy chilled as a dessert, small meal, or breakfast! Garnish with a few chocolate chips or cacao nibs if desired. |
