Crack Slaw (Egg Roll in a Bowl)

by Jacqui Little, MS, RD, CD This has long been a favorite of mine. My kids don't like cabbage (and to be honest, most of my clients don't, either), but they LOVE this recipe. I make big batches for easy meal prep on Sundays! |
Ingredients |
Serves 2 1 lb. lean ground beef or turkey Salt and pepper for seasoning 2 cups sliced mushrooms, optional 1 small head cabbage, sliced (about 4-5 cups) For the “Crack” Sauce: ¼ cup coconut aminos or 3 Tbsp. soy sauce 2 Tbsp. unsweetened rice vinegar or apple cider vinegar 1-2 tsp. Sriracha or other hot sauce 5-6 drops stevia For Garnish: ½ cup sliced green onions |
Directions |
Cook ground beef in large non-stick skillet over medium high heat, for about 8 minutes; season with salt and pepper. Use a wooden spoon to break up meat into small crumbles while cooking. Add cabbage and cover for a few minutes to help cook down cabbage. Meanwhile, combine ingredients for sauce in a small bowl. Pour over cabbage and beef and mix in until well combined. Cook, stirring, until cooked through, about 5 minutes. Garnish with green onions and serve hot. Adjust seasonings to taste if needed. |
